How can you tell which credit cards require you to pay in full each month and which don't?

Shar,

All true credit cards allow you to pay your balance over time. The cards that don't are not really credit cards - they are often called "travel & entertainment cards". With these cards, you pay your balance in full every month. The most widely used one like that is American Express (altough they now offer CREDIT cards such as Optima as well as T&E cards).

Any time you see interest (APR), it means that you can pay over time. Cards that require you to pay in full usually don't charge interest - they usually make their money from merchants on transaction fees and by charging you a flat annual fee.
